Cheesy Mash Snack Pot

The ultimate in comfort food ... The heat of the mash will melt the cheese so as you eat your way through you will find pockets of lovely gooey melting cheese.

Serves 4

900g (2 lb) potatoes, peeled and diced
25g (1oz) butter
3 tbsp milk
300g (11oz) canned sweetcorn, drained
100g (4oz) frozen peas, cooked
227g (8oz) canned red salmon drained and flaked
350g (12oz) Applewood smoked cheddar cheese, cubed
salt and freshly ground black pepper

 

 

Cook the potatoes in a pan of lightly salted water for 15 minutes until tender, drain well and mash thoroughly with the butter and milk.

Return to the pan and add the Sweetcorn, peas, salmon and cheese. Fold in gently and heat for 2 to 3 minutes with the lid on the pan.

Don’t stir or the mixture will become too mushy. Spoon into warmed bowls and serve.
